What I Ate Wednesday v9.0- Fast Food

We are still enjoying some much-needed time off.  Kyle is finally getting to sleep in! But it’s my favorite blogging day of the week so I just couldn’t miss WIAW! Catch up on past posts: version one, two, threefourfivesixseven, eight


Last week I had a Stella & Dot jewelry party to go to. I was rushing to get out the door and had very little time to eat.  But you know this girl had to eat! 


I whipped up the fastest healthy dinner I’ve ever seen.

Fast food healthy?  So fast and so healthy.  Ready go.


I diced a zucchini and cut asparagus in half.  Drizzle of EVOO and into the toaster oven on 400 for 15 minutes. <now I ran back to the bathroom to finish my makeup and hair>

Microwave a bag of spicy lentils and chickpeas – 90 seconds.

Mix them all together and what do you get? Flavor, nutrients, protein, fiber.  That’s what I call winning.

  1. Last night I quickly made grilled cheese ad added tomato and avocado to give it an extra veggie punch!

  2. Mmmm sounds amazing! I love avocado on anything!

  3. My quick and healthy meal usually involves a smoothie, salad or a veggie stir fry over quinoa (it cooks up so much quicker than rice!)
