>What I Ate Wednesday…v3.0

>Happy hump day!  It’s time for your mid-week glimpse of what went in my belly.  Yesterday was a heavy lifting day….so….A LOT went in my belly!  But it was all delicious.

This is actually a recap of what I ate on Tuesday….so I can send this post on wednesday…make sense?

Meal 1- 650am – small bowl of Special K with berries and almond milk pre-workout

Rocking my UA “I love 2 a days” shirt

Meal 2- 830am- strawberry, chocolate protein smoothie

Drink- 9am- Kombucha!  Goodness I love thee!

Meal 3- Noon- Leftover grilled chicken with buffalo sauce, roasted zucchini, and cucumber dill lentil chips.  I am a lunch time hater so the only way I really eat leftover chicken is drenched in Frank’s wing sauce.  This was also my first try of lentil chips which are gluten free.  I didn’t get the cucumber or dill flavor, but I liked em?

Meal 4- 3pm- Greek spinach salad with chicken, tomato, cucumber, goat cheese, and olives

Meal 5- I tried to resist but I just couldn’t!  I had the smallest semi-homemade lemon ricotta muffin and a 90cal Mix1 Acai-Pomegrante shake.  These muffins are seriously out of this world! I’m not kidding!  Recipe coming tomorrow and you should make them!

Meal 6- Italiano night! I attempted a new “twist” on my beloved spaghetti squash turkey marinara.  I roasted the squash in the oven and then topped it with mozzarella, ricotta, and my homemade turkey marinara.  I made a “wanna be” lasagna.  The ricotta added a great creaminess and I got punch from fresh parsley.  Thanks to Alexis for the squash/cheese inspiration!

Think back- what’s been the best thing you ate this week?  Anything new and healthy?

Asia and Polie got a new scratcher.  They’re psyched.

  1. >Great idea adding the ricotta. I've made spag squash and meat sauce before, which is good, but I always thought it needed a little something extra. I'll have to try cheeeese!

  2. >It was really creamy! I added fresh parsley to the ricotta too like I would for a lasagna. I think cottage cheese might be an interesting addition too.
