>What I Ate Wednesday…v2.0

>Hey!  It’s Wednesday and time for my second installment of “What I Ate Wednesday“.

I saw a bunch of other bloggers following this trend, so I jumped right in.  Only to be super confused when Twitter was covered with “WIAW” (what I ate Wednesday) posts at 9am.  Well how do you know what you ate if it’s only 9am I asked?  Silly girl- it doesn’t HAVE to be what you eat on Wednesday.  Oh.   I see.  Well I was kinda a fan of the Wednesday food journal thing so I’m sticking with it.  It’s my blog…I can do what I want to…right?  However for those who want to follow the WIAW trend head to Peas & Crayons blog.

So here we go:
Breakfast- 630am – Coffee with Italian Spice Creamer and a strawberry smoothie

It’s 6am- let’s take a picture!

Snack 1- 10am- Quinoa with almond milk, berries, slivered almonds, and cinnamon. (repeat of this breakfast blog)

Snack 2- 1245pm- Apple Pie LaraBar

Snack 2.5 – 115pm- Apple pre-Sam’s Club Run

Lunch- 3pm- Leftover pulled chicken BBQ on Udi’s Gluten Free Bread with Salad (see recipe below)

Snack 3- 2 plain rice cakes with Laughing Cow and red pepper

Dinner- Feta, basil, and tomato stuffed chicken with roasted zucchini.  Found today on the blog- Chic Meets Healthy

Snack “oh my gosh I have no will power”- possibly a sugar-free fudgesicle or almond milk ice….I’m posting early so I’ll let ya know!

The pulled chicken BBQ dish came from Kyle’s mamma.  It has a killer secret ingredient.  Basically cook chicken breasts in the crock pot with chicken broth on low about 6 hours.  Shred chicken and top with BBQ sauce.  Serve as a “sammy” with pickles and….are you ready…French’s fried onions!  Yes, those really unhealthy fried things!  They’re good and they make the sandwich so special.

Today I made another chaotic trip to Sam’s club.  Shew.  I survived and was happy with my savings.  I had to renew my membership for $40 today, but in my $118 spent on food I think I saved about $25 off Publix prices.  Lower prices on egg whites, chicken, and frozen fruit.  Sign me up!

  1. >hahaha I used to get confused on WAIW too!!! But I think I've figured it out now 😉 Best thing I ate today… probably the MONSTER salad I had at lunch, topped with lots of avocado!
