>Keen on quinoa

>Hello.  Have you met my super friend Quinoa?  Yes, pronounced Keen-wa.  You may have heard of his and his amazing health powers.  Well jump on board because the Keen on Quinoa express is heading out….next stop….Nutritionville!

I’m a huge nerd…yup.

We had friends over for a dinner party last Wednesday and quinoa made the menu.  I got the inspiration from Kyle’s client, Cindy, who shared with me that the chefs at Disney are whipping up some quinoa with roasted veggies and white balsamic.  Also on the menu was Moroccan Chicken Stew.  Blog on that to come.

I went a similar route and roasted squash, onion, and zucchini.  Then I mixed in cooked quinoa, fresh (home-grown) green onions, and 1T balsamic vinegar.  Can I say it was soooo good!

I tossed the chopped veggies in EVOO and salt & pepper and roasted them for 45 min at 400.

I cooked the quinoa using my rice cooker.  I think this is the easiest way to cook it.  I use a 2:1 ratio of liquid to quinoa.  I also used chicken broth instead of water for more flavor.

Here’s why quinoa is king:

  • It is one of the only vegetarian sources with all 9 essential amino acids- this makes it a complete protein
  • It’s high in protein
  • High in iron, manganese, and magnesium
  • Is it a grain?  No it’s actually a relative of leafy, greens like spinach or swiss chard.
  • The carbs in quinoa are slow releasing meaning they keep you full longer
How to use quinoa:
  • Substitute it for rice or couscous in your favorite recipe
  • Eat it for breakfast like grits or oatmeal
  • Add veggies and use as a pilaf
  • Top with stir-fried chicken and veggies
  • Use to make a veggie-patty
  • Serve cold instead of a pasta salad
Quinoa is available at more and more grocery stores.  Don’t fear the quinoa.  Your body will thank you!

    >Great information. I love quinoa. I haven't had a lot of success roasting veggies, but I make a lot of quinoa salads with fresh veggies.I would add that quinoa is a great source of fiber. I think one big reason so many people are Keen on Quinoa is that we feel so well the next day too.

Is it weird I went a week without it and started craving it! It feels like an indulgence but its super healthy. Since I started my health kick I am loving your blog.
